'Artichoke Nibbles'

'Artichoke Nibbles' - recipe from VA's friend Kenny's wife, 
at VA's 50th birthday party at Herbie's house in Oakland,
October 1993.

Modified over the years and here is where we are at today.

Use marinated artichoke hearts.  Use the oil from the
artichokes to saute the onions and garlic.

20 oz artichokes (drained weight)
3 large onions
12 cloves garlic (or more)
8 eggs
3/4 cups crumbs (crushed saltines)
9 oz cheese (sharp cheddar, Asiago, ??)
1 large bunch Italian parsley
1/2 t cayenne pepper
1 t oregano
1 t black pepper

Dice onions and garlic and saute in the oil until somewhat
soft but not browned.

Preheat oven to 350.

Coarsely chop artichoke hearts

Grate cheese.

Chop parsley.

Beat eggs.  Add spices, crumbs, cheese, parsley.  Gently
mix in artichokes.  Mixture will be stiff and chunky.  Let
it be so.

Lightly grease 10 x 15" glass baking dish.

Spread mixture in an even layer in baking dish and bake
for 30 minutes; should be very lightly browned on top.

Let it cool for 20 minutes and slice into bars of the
desired size with a sharp knife.  

I like to make bars 1" x 2" and arrange them on a serving
dish and decorate the top with a substantial quantity of
paprika.
