General scheme for baked rolled up chicken breasts.  
The kids like them pretty well; Karen was willing to
eat them, and I like them just fine.  Vary the usual
stuff to vary the result.

4 SBCB, about 1 lb total (skinless boneless chicken breasts)

filling:
1/2 of 5 oz container of soft cheese
1 T minced green onion

dip:
1 egg
2 T water
salt, pepper

crumbs:
3/4 c breadcrumbs
1/2 c chopped toasted nuts

1 T butter

alt. crumbs:
2 c   cornflakes
1/2 c grated parmesan
2 t   salt
1/2 t cayenne

Whack the SBCB's to 3/8 inch thick.  Each one,
apply 1/4 of the filling, fold sides in and 
roll up neatly.

Dip and crumb and place on metal sheet. 
Drizzle with a little butter and bake about
20-25 minutes @ 400
