Pasta with Pancetta

Pasta with Pancetta 

1 lb  fresh pasta
1.5   C chicken stock
1/4 t saffron
3 T   evoo
1/2   lb pancetta in 1/4" dice
4     cloves garlic minced
1/2 C white wine
2 t   turmeric
3     egg yolks
2/3 C grated Peccorino Romano
parsley chopped finely

simmer stock with saffron, reduce somewhat
cook pancetta in evoo until crisp - 
remove most of fat from pan
cook garlic then add wine and turmeric
cook pasta
beat yolks into 1 C reserved pasta water
add pasta to skillet, then saffron stock,
then yolks, cheese, parsley
