Rice Pudding 'Grand-mere'

Nice dessert. Easy. Healthy, even.
6 servings
5 cups milk (can use non-fat)
2 vanilla beans or 2 T vanilla
1/2 cup long-grain rice
3/4 - 1 cup sugar
3 T water
2 large eggs (can use non-fat)
Put milk into sauce pan. Slit open vanilla
beans and scrape seeds into milk. Throw
beans in too. Add rice and carefully simmer
(will burn easily) for 40 minutes.
After 30 minutes of simmering, cook 1/2 cup
of the sugar with the water in a heavy pan
until carmelized. Pour syrup into 1 1/2
quart terrine or casserole pan.
Preheat oven to 450.
Remove beans from rice. Whisk eggs with
rest of the sugar. Whisk in several
tablespoons of the hot rice mixture one at a
time, then slowly mix the eggs into the rest
of the rice. Pour all on top of the now
somewhat cooled and thickened caramel.
Bake about 10 minutes, until caramel is
bubbling up around the edges.
